The buffet is a treat yourself moment. A variety of dishes from seafood , eastern dishes and western fare. As vegetarians we did not starve and happy with choices esp the veg dumplings. Everything fresh and at times you can taste the love though desserts tended to be just sweet and blended into one. Sadly only water is included in the meal and everything else attracts a cost, you'd think tea and coffee could be included. Over all I think meat eaters esp sea food lovers will get the better deal for us the price could grab us a few meals else where and a drink or two. Service excellent and the venue clean and fairly lovely in the hotels foyer.

Went to Collins for the breakfast buffet as a hotel guest. This is probably the best part of the hotel. The selection was what you’d expect from most Grand Hyatt hotels — a wide variety of high-quality international cuisines. The bacon was awesome as it’s glazed in front of you. Even something as simple as the fruits station was excellent, with locally grown peaches. They also have a small dim sum station. But what was most memorable was the pastry section. Several of the pastries used macadamia, which isn’t common. The desserts were exquisite. The pastry chef, Krista, was super nice. The chocolate ganache cake was out so I asked if she could refill it. She certainly did, by bringing to my table a nicely plated cake! Wow! I believe hotel guests get a 50% discount, which is a really good deal.

Brisket Burger: tender brisket; bun was fresh but a bit over-charred. It lacked punch overall – needed more of the mustard and BBQ sauces to bring out the brisket flavour (most of it got absorbed into the bun), and the pickles were too understated. Brisket didn't taste very smoky. At $28, it's quite pricey, size and quality considered. Service was friendly, professional and speedy. Atmosphere was excellent for conversation.

One of the most disappointing culinary experiences of my life. The service was horrendous. We were served by a trainee who seemed very confused about the menu. I do not blame the server, but someone should've accompanied her. She had to "go back and confirm" menu items several times and she came back on multiple occasions to tell us that certain menu items weren't available. We were there for a total of two and half hours and were only served water only once. I ended up grabbing the pitcher and serving water to everyone at our table. The food was a mixed bag, the appetizers and most of the main dishes tasted very good. However, my scotch fillet was the chewiest steak I'd ever had. I was also given a butter knife with my steak. These complaints may sound trivial, but when you're spending $100+ person, you expect decent service. To top everything off, the server rushed to bring the bill before we had even finished eating. I do no wish to return to this restaurant.

Atmosphere - perfect with its high sealing, so loud noises are dulled down and enjoy private conversations Food - high quality yu can taste, delicious Service - as expected from a 5 star hotel Price - you get what you pay for. Overall, really enjoyed our experience here. Highly recommend for special occasions or important business meetings
